Breakfast for Dinner

My kids love to have breakfast for dinner. Whether it is omelets, skillet, burritos, or pancakes; they love breakfast for dinner! I seen something on pinterest about making pancakes in a cupcake tin. Now I love cupcake tin meals! We have made (and love) Mini Deep Dish Pizzas from the cupcake tin and another favorite is ham and cheese with biscuits in the cupcake pan. So I decided, we were going to try pancakes made with the cupcake tin.... and they were DELICIOUS! I made 2 dz worth and my 3 kids alone at 11 of them! :o) We ended up making Blueberry Pancake Bites, Chocolate Chip Pancake Bites, and Peanut Butter Pancake Bites. The possibilities are endless with this super quick, easy, and yummy little meal. We added some sausage links and bacon slices to eat with our pancake bites.


Directions :
1. Mix pancake batter and gather pan and utensils needed. 
2. Spray your cupcake tin with Non-Stick spray, be sure to cover the area completely for easy removal after cooking. Turn oven on and preheat to 350 degrees.
3. Spoon pancake batter into cupcake tin and fill about 1/2-3/4 full.
4. Bake in oven for 8-12 minutes depending on your oven. The edges will get golden brown when ready.
5. Remove and plate, serve with syrup, butter, powdered sugar, etc etc.
